Get Forked Friday: Corn Casserole - The Sides Series
Corn Casserole
What you need:
5 ears of corn (Corn removed from cob)
1 cup sour cream
1 stick of butter, melted
1 cup sour cream

1 (8 oz) package corn muffin mix
1 Clove of Crushed Fresh Garlic
1/4 Cup of Shredded Colby Jack Cheese
1/4 Cup of Shredded Cheddar Cheese
S&P to taste
What you need to do: In a large bowl, stir together Corn, corn muffin mix, cheese, sour cream, garlic and butter. Add Salt and Pepper to taste, make sure its mixed well. Pour into a buttered casserole dish, Sprinkle a little extra cheese on top and Bake at 350° for 40 to 45 minutes, or until golden brown.
