Berber spiced Okra and Tomato Ragu
This past summer my family and I traveled to Africa, There are so many recipes and things I have been wanting to share with you all, but I'm going to start here!
Berber spiced Okra and Tomato Ragu
What you need:
Berber Spice (info below)
Olive Oil
Salt and Pepper
1 container of fresh okra - Take tops off, and cut into 3
3-4 small tomatoes
7 cloves of Fresh Garlic Chopped
1/4 cup Veggie Broth (you can use water if you do not have the broth)
What to do:
Heat Olive oil in a large high sided fry pan on Med heat
Sprinkle 1/2 table spoon of Berber spice into the oil
add the garlic, stirring & sautéing for approx. 3-5 min
Add the tomatoes with it’s juices and sauté for approx. 5-10 min
Add the okra to the pan and stir
Salt and Pepper to taste
Sauté for approx., 5 min
Serve over rice
This dish is warm with those African spices and delicious. Plus fast and easy!
Berber Spice:
Personally I usually like to make my own Berber spice rub (And have been told it’s divine) but for this little quickie dish I purchased pre made spice blend from The Spice and Tea Exchange. You can purchase it from them online
