Get Forked Friday: Lightly Blackened Shrimp Pasta with lime

What you need:

Cilantro chopped for garnishing
Cherry tomatoes halved
1 pound of shrimp peeled and deveined
Blackened Seafood Seasoning
Juice of 2 limes
7 Cloves of Garlic Crushed
1 box of Spaghetti
2 Green Onions Chopped
Salt and Pepper to Taste
2 Tablespoon of Butter
2 Tablespoons of good olive oil

What to do:

-Heat 2 Tablespoons of Olive Oil and 1 tablespoon butter to Med High heat
-Season the shrimp generally with the blackening seasoning and salt and pepper to taste
-Place the shrimp in the hot pan in one layer and allow to sear on each side for approx. 60 seconds, remove from pan (repeat if necessary)
- Turn the head down to low/med
- Add the other butter to the pan and the garlic and onion sautéing until golden brown
- Add the tomatoes
- Add lime juice scraping the brown bits off the bottom of the pan
- Add the Shrimp back in and add the cooked pasta.
- Toss and serve adding cilantro to garnish
